Evolutionists make no sense. They say we evolved form monkeys, but science itself contradicts that claim when their research proves if we did evolve from monkeys, monkeys would not be around anymore. It's a fact of nature that nobody can disprove. Since we definitely did not evolve from monkeys, we were created by God.

Evidence is typically observable since evidence is a noun. It may be something that is measured, classified, describeable, and able for others to comprehend because the evidence can be observed by more than one set of eyes.
After all, you may say you have a 4-headed monkey that can sing a barbershop quartet, but unless someone else witnesses it, it currently lies only in your imagination (well maybe mine to but I might picture each head wearing a differnt colored hat, where you may think all the monkey heads have differnt colored eyes).
However, if 100 people say they saw a 4-headed monkey sing, then the liklihood of the story starts to increase. So does evidence become an actual thing that you and anyone else can observe, or is evidence simply enough people saying the same thing for an unobservable to everyone "noun"?

All theories are only provable using observable evidence. I think, like most religious people, you have the word "evidence" mixed up with the word "belief".

Well, since Science is based on observation, I think it's pretty obvious why they don't take into account the unobservable and unprovable.
Also, as for the whole 'we evolved from monkeys' thing...if you think that, you know nothing about evolution.
We didn't evolve from monkeys, apes, chimps, etc. We share a common ancestor and evolved along different paths, us ending up as we are, and monkeys where they are. We didn't come from them, we are simply closely related.

Einstein believed in an intelligent Creator. He also believed that 2 theories, quantum theory and the theory of General Relativity could be reconciled. He died, believing that he was wrong about this. Such an intelligent man, and yet so humble as believe that he may be wrong. It turned out that there was evidence that he hadn't seen during his life, evidence that has led to String Theory, and is claimed to reconcile the two. For Einstein, this was evidence unseen.

Evolutionists are phantoms of the minds of certain fundamentalist Christians, who define the rest of the world in terms of their fundie/religious viewpoint. They can't conceive of people who aren't fundamentalist in their methodology, so they carry on as if we all were. Which makes your question an oxymoron of the first order.
Those of us who are interested in or work in science understand that measurable, repeatable results are part of the process. Quantum physics is challenging our idea of observable, however, which is tremendously cool.
