Why don't you just take a drive to a nearby farm and wrestle up an entire cow! Should meet all your needs.
Kidding.
I'm not so sure about where to get a 72oz steak but I'd imagine that any butcher shop could have them. Just ask them for the whole darn thing instead of cutting it up into several steaks. Worth a shot!

You go to a butcher and ask them to cut your steaks thick and 72oz please. If you want a 3lb hamburger then buy 3 lbs of hamburger and grill your own.

Just go to the butcher shop and ask for them to cut to order.
I have gone to my local butcher shop and ordered 2" thick Porterhouse steaks. They just cut them right there for you.
