I like to BBQ/grill fish and scallops. What seasoning works well?

Well there are a couple I like: Butter Ponchatrain it is kind of a Cajun garlic butter product and I cook the seafood on foil with a little white wine to keep it moist. I also use a Cajun Blackened that I use on the grill with the foil as the one above or I use butter and pan fry it. Both of the two I find yummy are made by Dan and Bucks. Bon A petite Debbie

Zatarrains makes several that are quite tasty and also have a Crab Boil for making crab. I prefer to keep my spices simple with fish, though. A little lemon, salt, pepper, garlic goes along way!

With all of these rub lightly with oil before seasoning,

Combining Cajun and southwestern is my favorite.

Blackening /Cajun spice very versatile use sparingly on scallops and remember the key to a good scallop is to sear completely over very hot heat then remove and allow to rest to cook Thur to a perfect rare
2 Tbls. Paprika
2 tsp salt
2 tsp lemon pepper
1.5 tsp garlic powder
1.5 tsp ground red pepper
1.5 tsp. dried, crushed basil
1 tsp. onion powder
1 tsp. dried thyme

Cajun bay mix Cajun and old bay seasoning equally for a milder rub

Jerk seasoning for big flavor fish like tuna, mackerel, salmon
8 tsp. allspice berries, ground
2 Tbsp. dry mustard
4 tsp. paprika
2 tsp. granulated onion.
2 tsp. lemon pepper
1 tsp. dried red pepper flakes
1 tsp. ground white or black pepper
1/2 tsp. cayenne
1/2 tsp. granulated garlic
1/2 tsp. cinnamon
1/2 tsp. salt
1/4 tsp. dry thyme

Adobe try it on Tilapia before sauteing or grilling
6 Tablespoons Salt
6 Tablespoons Granulated Garlic
4 Tablespoons Oregano
2 Tablespoons Black Pepper
2 Tablespoons Turmeric
2 Tablespoons Onion Powder


Southwestern Dry rub Great on seared marlin or sprinkle on salmon that you have rubbed with mustard
3 teaspoons chili powder
2 teaspoons paprika
1 teaspoon cayenne
1 teaspoon cumin
1 teaspoon coriander, ground
1 teaspoon granulated garlic
1 teaspoon kosher salt
1 teaspoon cracked black pepper


Ruth's Trout seasoning
1 part lemon pepper
2 parts Italian seasoning
pinch of thyme

I just use oil and seasoned salt with a little lemon juice and paint the fish with that while cooking using indirect method

We have two favorites: Old Bay seasoning and Durn Good seasoning. We also like to finely chop cilantro and mix it with a little butter.
