OK, looking for simple recipes that are quick and easy. I'm tired of making the same things (spaggetti, goulash, pizza, burgers, hot dogs) just looking for some really good recipes that are easy and dont take forever. I've tried cook books and things, but everything I try, the kids dont like. Any suggestions?

Tatar tot casserole. My kids love this.
This is how I make it so you could add more or less.
In a frying pan brown 1 pound hamburger
Mix 3 cans cream of mushroom or cream of celary soup
Add milk but keep it kind of thick, with the hamburgar
You can add any kind of spices you like
I also mix in 1 or 2 cans french style green beans(optional)
Put tatar tots evenly in the bottom of a cake pan
Pour mixture on top, sprinkle cheese on top
Bake at 425 for about 35 min. untill cheese is melted, a little brown
use a fork to make sure tatar tots are cooked.
Quick and easy. Good luck. I hope you like it.

It's really tough to cook any recipe whether it is quick or complicated when there are kids in the house. Your dilemma is justified. Hang in there.
Here's a tasty dish that is simple and satisfies most kids. You might have already tried it but in case you haven't ; here it is.

SIMPLE SHEPHERDS PIE (Kid Friendly version)

Make mashed potatoes (fresh or instant) Set aside
Brown ground beef and season w/seasonall, or salt & pepper

layer the browned ground beef on the bottom of a baking dish.
Pour pre-mixed brown gravy (about 2-3 pkgs w/ only 2 1/2 cups water instead of 3 like pkg recommends) over it.
(optional gravy not necessary but tastes good with it)

Next sprinkle a layer of a veggie your kids enjoy like corn or peas or broccoli. (optional layer too)

On top of all of that spread the mashed potatoes and bake at 350 for about 20-30 minutes. Let stand for 10 minutes before cutting into squares and serve with dinner rolls and salad on side or with fresh fruit like strawberries and a bit of sugar on top. Just the idea of sugar sprinkled on top of something makes kids happy.

Good Luck!

One of my kids favorites of all times is simple. Not too time consuming and I never have left overs.
Mexican Chicken:
In a large pot place 4 boneless skinless chicken breasts with enough water to boil. Remove chicken once cooked. Save the water and cook one bag of wide egg noodles. Drain and set aside. In the same large pot, add 1 can cream of chicken soup, 1 cup salsa, 1 small block of velveeta cheese. Cook on medium high heat until cheese is melted. Pour in cooked noodles and stir. Pour Into casserole dish sprayed with pam, place chicken breasts on top. Sprinkle top with 2 cups crushed Nacho Cheese Doritos. Bake for 12 minutes at 350 degrees. It may seem like this is lengthy, but I promise it goes faster than it appears on paper! Good Luck with your cooking-kids can make us feel so inadequete at times!!

Easy Lasagna

2 cloves of garlic, minced
1 small onion, chopped
1 tablespoon olive oil
1 pound ground beef or ground pork
1 8 ounce can chopped tomatoes
1 8 ounce can tomato sauce
1 8 ounce can tomato paste
2 teaspoons dried basil, crushed
1 teaspoon dried oregano, crushed
1/2 teaspoon salt
1/4 teaspoon pepper
dash of sugar
1 bay leaf
6 lasagna noodles
1 egg, beaten
2 cups ricotta cheese
1/2 cup Parmesan cheese
1/2 cup mozzarella cheese, shredded

Heat oil in large skillet on medium high heat. Add garlic and onions and stir fry for about 1 minute. Add ground meat and stir until cooked. Drain the fat and return to stove. Stir in the tomatoes, tomato sauce, and tomato paste. Add spices, bay leaf, and stir. Bring to a boil, reduce heat, cover, and simmer for 10 minutes, then remove from heat, and remove bay leaf.

Cook lasagna noodles according to package directions and drain. Mix together in a bowl egg, ricotta cheese, and Parmesan cheese.

In a 9 1/2 X 12 inch casserole dish, begin by layering bottom with 3 cooked noodles. Next spread half the cheese mixture, then half the meat mixture, and repeat. Sprinkle mozzarella cheese on top.

Bake in a 375F (190C) degree oven for 30 minutes. Remove from oven and let cool for 10 minutes. Serve while hot.

Make ahead of time: cover with plastic wrap and refrigerate overnight, then bake the next day by covering with foil. After 30 minutes, remove foil and continue baking for another 20 minutes.

The best thing you can do is invest in a crock pot. With this simple appliance you can make simple and tasty dishes while you are at work. Most of them require little prep time and a long time cooking at low while you might not be home. You can usually include veggies and starches, make roasts, soups you name it.
