It seems that you're talking about crepe suzettes. I know that the German people make them, and call them pan cakes. I lived among Polish people in the mining section of Pennsulvania, and know that they also made the very thin pancakes. I don't remember what they called them, though.
I make them myself, and roll a thin spread of strawberry jam in them.

Your grandmother may well be harking back to an older, richer version of pancake. Try this and see whether it rings the right bells for you? This notation makes a good dozen, but it scales 'up to infinity' of course. :-)
Nalesniki

100g flour
2 eggs
2 egg yolks
500ml milk
1 tsp sugar
½ tsp salt
fresh butter for frying
Method
----------
After sifting, mix the flour eggs and egg yolks. Add the milk, sugar and salt and beat with a whisk (or if you must, a mixer *at low speed*) for 2-3 minutes. Don't over work.
Heat a 4-5" frying pan (for even, constant heat, a cast iron one, if you've got it) and brush with butter. When you're satisfied the pan is 'up to speed', ladle a tablespoonful of the batter and angle the pan at once to spread the batter evenly across the pan surface. Cook the pancake on both sides until light golden. Repeat until batter is used up.

I make either crepes or pancakes using the same recipe.
1 cup Plain flour
1 cup milk
1 egg
1 tablespoon sugar (for sweet pancakes only)
Depending on whether I would prefer pancakes or crepes I just adjust the amount of milk I use.

Batter
2 eggs
1 1/2 cup milk
3 tbsp water
1/2 cup sifted flour
1/4 tsp salt
Pancakes
Beat eggs until light. Add milk and water and beat again a few times. Add remaining ingredients and scrape sides. Heat small frying pan. Add a tablespoon of butter and roll around covering the entire pan. Add about 3 tablespoons of batter rolling it around to make it even. Cook the bottom side only over moderate heat. Remove from pan and place on large platter until ready to fill. Repeat until mix is all gone.
