Make guacamole and use as a dip or on tacos, etc.

Mashed with a little lemon juice, tomato salsa, seasoning salt, and pepper, makes it guacamole.

We also put slices on sandwiches, diced on top of tortilla soup, halved and stuffed with seafood or chicken salad, made into ice cream, or pie. I'll include the ice cream and pie recipes, as they are more unusual.

Avocado Ice Cream

Ingredients
2 large avocados, peeled, seeded, and sliced
4 cups medium or whipping cream
3 tablespoons tequila or light rum
3 large egg yolks
2 tablespoons all-purpose flour
1/4 cup sugar
Pinch of salt
1-1/2 teaspoons vanilla

Instructions
Combine the avocados and 1 cup of the cream in the container of a blender or processor. Add the liquor and whirl until smooth. Refrigerate for 2 hours. Beat the egg yolks with another cup of the cream. In a saucepan, combine the flour, sugar, and salt and whisk to blend thoroughly. Slowly whisk in the remaining 2 cups of cream and stir over medium heat until slightly thickened. Whisk half the hot mixture into the egg yolks. Pour the mixture back into the pan and stir over medium heat for 1 minute. Remove from the heat, stir in the vanilla, and chill for 2 hours. Combine the avocado mixture and the egg yolk mixture in the container of an ice cream machine and process according to the manufacturer's instructions.

Yield: 8 servings.

Avocado Pie

(9-inch) prepared graham cracker pie crust
1/4 cup fresh lime juice
1/4 cup fresh lemon juice
1 envelope unflavored gelatin
3 medium-size very ripe Hass avocados*
1 (14 ounce) can sweetened condensed milk
1/2 cup heavy cream
1/2 cup sour cream

* If an avocado is ripe, it will yield to a gentle pressure.

Refrigerate graham cracker crust until well chilled.

In a small bowl, combine lime juice, lemon juice, and unflavored gelatin; let stand 4 to 5 minutes or until softened.

In a large bowl or the food processor, combine gelatin mixture, avocados, and sweetened condensed milk. Pour mixture into prepared graham cracker pie crust. Refrigerate at least 2 hours or until the filling is firm. In a small bowl, whip heavy cream and sour cream together until stiff peaks form. Serve pie topped with prepared whipped cream mixture.

Makes 8 servings.

I love them w/salt, pepper and lime juice.

They are also good as a melt.
Lightly toast your bread, put your favorite tuna salad on it, slice the avocado on and top with your favorite cheese. Toast it until the cheese is melted and the sandwich is warm.

I like to make granary toast with butter, then slice the avocado up and eat on toast, sprinkled with salt and pepper, also delicious with a little vinegar.

I like eating them straight with creamy Italian dressing. Or just sliced on a green salad or cubed up in pasta salad, or on sandwiches and panini. I like guac, but it's at the bottom of the list
