this is quick and easy from allrecipes
INGREDIENTS
3 eggs
3 teaspoons Worcestershire sauce
12 (5.5 ounce) lamb chops
2 cups dry bread crumbs
DIRECTIONS
Preheat oven to 375 degrees F (190 degrees C).
In a medium bowl, combine the eggs and the Worcestershire sauce; stir well. Dip each lamb chop in the sauce and then lightly dredge in the bread crumbs. Then arrange them in a 9x13-inch baking dish.
Bake at 375 degrees F (190 degrees C) for 20 minutes, turn chops over, and cook for 20 more minutes, or to desired doneness.
hmm, mashed potatoes are good :) make them extra creamy :) as for the gravy, i make gravy from instant cream of mushroom soup (canned or powdered mix). i add soy sauce, a little cornstarch, butter and some sliced button mushrooms :)

here's a middle eastern way.........
chops are fantstic choice for a quickly cooked dinner .
Lamb Stew
4 tabs unsalted butter
1 1/2 pounds lean lamb chops, cut into 1-inch pieces
Kosher salt and freshly ground pepper
3 carrots, thinly sliced
1 onion, finely chopped
1/2 teas ground cinnamon
orange zest (from half orange)
1 can diced tomatoes, drained
3/4 C chicken stock
Melt the butter in a medium casserole. Season the lamb with salt and pepper. Add the meat to the casserole and cook over moderately high heat until browned all over, about 10 minutes. Using a slotted spoon, transfer the meat to a large plate.
Add carrots and onion to the casserole and cook over moderate heat until just softened, about 10 minutes. Return the meat to the casserole. Add the cinnamon and orange zests and a generous pinch of pepper and cook, stirring, until fragrant. Add the tomatoes and stock and bring the stew to a boil.
Partially cover the stew and cook over moderate heat until the meat is just tender, 40 minutes. Discard the orange zests and serve.

If you really want something a bit different thats not fried try making this marinade
***Maple Chop Marinade:***
1/3 cup maple syrup
1/3 cup Dijon mustard
2 tablespoons molasses
2 tablespoons cider vinegar
1 teaspoon ground cumin
Salt and pepper to taste
for 4 pork chops. set some of the marinade aside and then add pork chops, let this sit for about 30mins or longer (the longer the better).. then preheat the oven for 350 and cook for 30mins while brushing on marinade.. i love these, i started cooking these years ago and i always go back

i actually used lamb chops and leftover mash to make something when i thought i had no food. It may not work, but you can always play around with it, it might give you an idea.
2 lamb chops
3 to 4 cups of mash potato (i assume you can make that)
1/2 cup satay sauce (or bbq sauce, any sauce you like)
1 cup peas, or any other vegies like that
1 sheet puff pastry
grill lamp chops on a medium heat for 15 - 18 minutes (less if you like it rare)
boil peas or whatever till cooked
cut up lamb chops into small cubes. mix in a bowl with potato and peas and sauce.
cut pastry into quarters, spoon mixture onto pastry squares and roll up into a cylinder.
place rolls on greased baking tray in preheated oven at 180 C for 12 - 15 minutes.

Easy crockpot lamb chops with an orange and thyme sauce.
INGREDIENTS:
8 lamb rib chops
2 tablespoons vegetable oil
1/2 cup orange juice
2 tablespoons honey
1 teaspoon salt
2 tablespoons cornstarch
1/4 teaspoon thyme
1 teaspoon grated orange peel
PREPARATION:
Heat oil in a heavy skillet over medium heat, brown lamb chops on both sides; drain well. Whisk together the orange juice, honey, salt, cornstarch, thyme, and grated orange peel. Place browned lamb chops in crockpot; pour in orange mixture, turning chops to coat well.
Cover and cook on LOW 7 to 9 hours (HIGH 3 1/2 to 4 1/2 hours). Serves 4 to 8.

Make your side be rice. Grab a large can of cream of chicken soup, fry up some mushrooms and onions and mix into the rice. Pour the cream of chicken in the pot and stir.
Great as a quick and easy side to any meat.
I would broil the lamb chops...

Breakfast is a great choice for an easy meal. Grilled cheese and veggie soup is easy also. I have a recipe for Pork Chop Casserole. I use a 13x9in glass baking pan. You also need aluminum foil. Ingredients: 1 can creamy onion soup 1 can cheddar soup 8 med potatoes 4-5 pork chops(not really thin) Put pork chops in baking dish flat on the bottom. Slice potatoes on top of this. Mix both cans of soup together; pour on top of pork chops and potatoes. Bake covered with aluminum foil at 400 degrees F for 1 hour. The pork chops get really tender. I usually just heat up a can of peas to go with it. I usually put salt and pepper on the pork chops and then I put it on the potatoes to-just on each layer. Hope you try it!

For the chops, the best way is garlic and thyme, and on the barbecue.
As for mash potato, here is my recipe
MASH POTATOES :
Potatoes
double cream or crème fraîche
butter
salt & pepper
a touch of nutmeg
Milk
Boil (or steam) the potatoes in salty water
When well done, smash them add a butter, 2-3 table spoons of cream, salt, pepper,
nutmeg and milk.
As for the quantities, it really depends on your taste : thick mash or more liquid, creamier...

This is going to be good
Prep time: 15 minutes
Ingredients:
2 tsp. vegetable oil
1 large zucchini, cut in half and sliced
3/4 c. frozen corn, thawed
7-oz. jar roasted red peppers, sliced
1/3 c. ricotta cheese
1 1/4 c. grated monterey jack cheese
1 c. salsa, drained of juice in a colander
6 6-in. corn tortillas
Directions:
Preheat oven to 500 degrees Fahrenheit (260 degrees Celsius).
Add vegetable oil to large pan and heat, adding zucchini, corn, and peppers.
In bowl, mix cheeses.
Trim sides of tortillas to fit a loaf pan. Layer tortillas, veggies, cheeses, and salsa.
Cover with aluminum foil and bake for 10 to 15 minutes.
Serves: 5
Serving size: 1 slice

Rub lamb chops with a combo of chopped garlic, black pepper, rosemary, salt & olive oil. Leave for about 20 minutes then grill. Juicy!
