Where some factory made ones are concerned, you may not sometimes want to know... :-)

The hotdog's "parents", the original Frankfurter, one of, if not *the* most famous of the 800-odd varieties of German 'Brühwürste' ('braised' or 'broth' sausages), is made up of a mix of finely ground lean pork, pork back fat and offal, which is then spiced, cased (natural or synthetic), blanched for some 45 minutes in stock or broth (hence the name) and then finally smoked.

Once it has reached the kitchen, it is then poached again in stock or just plain water for a further 45-60mins before being served, garnished in whatever way you like. That's it.

(The secret, of course, lies in the spicing which every self-respecting German sausage maker, like all his colleagues worldwide, guards jealously..!)

In modern times, the meat mix has expanded to come to include poultry (turkey, chicken) and beef, as well as the pork, or each meat type singly as well. (Jokes about ill-fated dogs are just about as old as the adoption of the hotdog as a universal 'streetfood' itself: they were doing the rounds before the turn of the previous century.)

Hope this helps.

"Frankfurter, Hot Dog, Wiener, or Bologna With Byproducts" or "With Variety Meats" are made according to the specifications for cooked and/or smoked sausages , except they consist of not less than 15% of one or more kinds of raw skeletal muscle meat with raw meat byproducts. The byproducts (heart, kidney, or liver, for example) must be named with the derived species and be individually named in the ingredients statement.

It depends on the brand. Some use entrails. But brands like Nathans use pure beef.
