I know of two parts to the puzzle that might have this effect.
The body often responds to excessive free radicals (break-down products formed by the oxygenation of synthetic chemicals and other things) through inflammation. It's trying to dilute the harmful bits.
Green tea is a known powerful anti-oxidant, which means that it's great at reducing the amount of free radicals in the body.
If green tea really does *reduce* rheumatoid arthritis (prevention is another matter), that's significant evidence for the free-radical/inflammation model.

Nothing prevents Rheumatoid Arthritis, if it did we would all be CURED and this disease would be unknown. However diet can play a role in controlling the painful red hot swollen joints and joint deterioration.
