First, I would start with a smaller scrapbook size - maybe an 8x8 size instead of the 12x12. You could even go smaller than the 8x8, but I wouldn't go any larger than that size for a guy. I like the ones that are post bound and use plastic "page protector" type sheets that you slide the decorated scrapbook page into from the top.
Second, gather up all the things you want to put in the book and lay them out in front of you. You should be able to get ideas on colors of background paper from that. You can get pads of background papers at the craft store - try to look for ones that contain more unisex or masculine patterns than florally, frilly ones. A few frilly pages would be okay, but for a guy you want to keep it to a minimum and keep it subtle.
Go the the craft store to get your paper, and pick up a FEW odds and ends like stickers. Especially if you see stickers that relate to things you like to do together like camping or baseball or cooking or whatever.
Start laying out your pages, chosing background papers to suit what you want to put on the pages. Don't be afraid to mix and match colors, add stickers, etc. Since you're including letters, I would probably make the book as chronological as possible, and really highlight important things, like your first vacation together, first time you said I love you, etc.
Don't forget to include quotes from your favorite books and movies as well. And journaling - writing your own thoughts and words on paper instead of using preprinted quotes, is a great way to include references to inside jokes, your own personal stories, etc.

Put a pic on the front of the album or get stickers of the alphabet and put your names on it. Start the first page with some kind of memento of your first date. If you don't have one go to the place, like if it was a restaurant, and get a take-out menu or something with the name of the place. Try to keep everything in order. Creative Memories is a company, kind of like Pampered Chef or Tupperware, that sells scrapbooking items. Check out their website, or go to a craft store for ideas.

I agree with Silver but I started with a 4x4 and it was too small so I switched to a 12x12 and sometimes that isn't even big enough. I just did our whole Disney Vacation and I did over 30 pages. Talk about a lot of pictures, tickets, momentoes, etc. Good luck with yours, I love working on mine.

I'd make each page with just one activity. If you went to two plays, I'd put one play one one page; don't combine them. As for movies, you've probably gone to so many; If it's not too dorky, take a pic of him buying tickets or popcorn, or both of you in your seats before the movie, and add to the page.

If you have pics of the events and such you have the memorabelia from, add those things to the pages you make of each particular event. If you don't have pics then you can make a photless page.
