I think a top quality restaurant must have a combination of excellent food and wine, discreet but efficient service, warm and inviting ambiance and attention to detail in all things.

But that's just me...

Service! Service! Service! Excellent food can be made less enjoyable by poor service, and mediocre food can be made much more enjoyable by a caring server. The best is a combination of the two (good food & good service). And while I'm at it: a pet peeve of mine is when a server comes up to the table and chirps "How are you guys today?" I am a grandmother of 12 and dress nicely when I go out to eat, and the question is offensive and a bit disrespectful. Even "How are you folks?" or just "Good morning/afternoon /evening; how are you ?" would be fine. If there are males in my group I often say, "The guys are well and so are the ladies", but sometimes even then the server doesn't get it. Seem silly/petty to you? I don't think so, because eating out should be a gracious experience and cause a person to want to return, and a little civility/courtesy goes a long way. Thanks for the opportunity to say this.

I'm in the restaurant business and I gotta say - service! I've had some shocking service in the past. Food is really important too, but that's pretty obvious - i think service is the thing people tend to overlook and that's why their restaurants fail.

yeah definitely service. you can have the flashest food going but if you have to wait 2 hours for it to arrive, forget about it... and staff that don't keep hassling you asking how your meal is! But the good ones (waiters) seem to konw just when to take your plate away.
