Definitely butter, but peanut butter with marmalade. It's twenty times better than it sounds

I used to have one made with mayo, one without. The small amount of butter in the skillet is great to get the bread all toasted.

Butter on the outside of the bread- definitely. I love love love mayonnaise, but I can't stand it on grilled cheese (too mushy.) Just a little mustard on the inside and you're good to go.

Kinda cute story: I always loved my mom's grilled cheese but mine never tasted as good as hers UNTIL I watched her make one just a few years ago and caught her with the mayo in hand. When I asked why she hadn't shared that little secret with me she smiled and said I never asked!
