Well bro.....if I start saying names of villages I'll become you crazy....but for you, would be a must to go to Qadisha Valley or Valley of the Saints. Many of the monasteries were built in the rocks of the mountains.
You will find all the churchs and monasteries where the Saints from Lebanon lived.
You can visit Saint Rafqa, and Saint Namtallah's places. Also you can visit Saint Charbel in Annaya. You'll breath peace there, and will be in contact with the first maronite christian places. Most of the history from lebanese christianity is there.Becharre is in the way and is the place where Khalil Gibran Khalil lived.
That places are relatively close to The Cedars.
You cant leave Lebanon without visit Faraya and Kfardebian in Keserwan. Faraya is the most lovely place in the mountain, and becomes an important ski center i winter and has the most beautiful church I have seen in a village: Mar Challita.
Also....you have to go to Broummana in the Metn....is a beautiful village in middle of a big pine trees place. And of course more to the south.....in the way after Damour, you will go up till Deir el Qamar and Beiteddine. You'll enjoy that places very much.
Nahr Ibrahim zone, is also beautiful. Which village in Lebanon is not beautiful????
I can say 100 more names. but you have to discover them by yourself.
Each of them, have their own charm..

1-Dooma is said to be the most beautiful village in Lebanon.
2-Ehden is a famous summering town and touristic center often called "the Bride of Summer Resorts in the North of Lebanon." 30 Km from Tripoli.
3-Bshareh: Just under the Cedar forest, and the hometown of Lebanese poet Khalil Gebran. Consider a trip to the Kadisha Vallery, a world heritage site.
4-Deir el Qamar : a beautiful and historic village consisting of stone houses with red-tiled roofs. Once the residence of the governors of Lebanon. (A must-see)
5-Hammana : an attractive resort.
6-Harissa: This is an important Lebanese pilgrimage site high above Jounieh. 20km distance from Beirut. The nearby villages are beautiful.
*LiLi mentioned Anjar, but Anjar isn't really a village. It's rather a town, an Armenian town. Well worth a visit though.

well you must for sure visit Anjar, its the most amazing and gorgeous village a have ever been! there are many villages in lebanon but i love this one, the weather is perfect, the people are friendly, there are many restaurants that offer fresh trout plus a full array of Lebanese and Armenian dishes,Some of these restaurants are literally built over the trout ponds.there are no hotels in Anjar but lodging can be found in Chtaura 15 kilometers away, there are few lakes u can go and see, 3 churches to visit, u can also visit the palace from the umayyad period! dont skip it!

Wasn't Kahlil Gibran born in a northern mountain village? I think it was called Bshari. That might be a good place to visit. Maybe his childhood home is a museum or something.

I think Hallambra said it all...to sum it up Bsharreh (Jibran 's house) on your way to the Cedars. St Rafqa and St Hardini, a little above Batroun. Kfardebyan, St Charbel's house. Faraya, Fakra. Broumana, Sanine. Falougha.
These places have beautiful scenery.
I love Geita Grotto too, it is amazing, nothing like I have seen in my life.

ooh.... like Last Mohican said... Ehden is great (lots of traffic in the summer though)
there's Beshmezzine, Dhour Choueir (not that special, but my nan has a summer home there and AlSanyoura is one of the best restaurants... before they made it more formal it was better though) and then some others... it's all a matter of opinion, it depends on what you like
