Traditionally, the hours between the last meal of the day and the first of the following day was called a "fast". Fasting is when you don't eat or (depending on how you view fasting) drink. The original wording was "breaking the fast" or breaking my fast" which became breakfast.

Well all night long you did not eat. Therefore you fasted all night. When you got up you ate your morning meal thereby breaking your fast. So you celebrated breaking your fast with your breakfast meal.
Now why you call the noon meal lunch and the evening meal either dinner or supper, or why you have a snack at other times is entirely another question. I don't have a clue.

Breakfast is a meal, often light, usually eaten in the morning. The name derives from the concept that you have not eaten while sleeping, i.e., you are fasting during that time, and break that fast with the meal. It is therefore a calque of the French déjeuner or petit déjeuner and the Spanish desayuno. The German Frühstück, the Danish morgenmad, the Esperanto matenmanĝo, and the Chinese záocān (早餐) meaning "morning meal."
