One must heat (boil) the water solution of fat and NaOH strongly to carry out the hydrolysis of the fatty acid triester of glycerol to glycerol and the sodium salt of the fatty acid (the soap). Setting up a reflux condenser to return condensed water to the reaction mixture prevents it from spoiling by boiling away.
