Does anyone know why raw oysters are served in restaurants on a stand above the table? is it just aesthetic reasons or something else?

Its all presentation. It has nothing to do with the "proper" way to serve or anything else. Its that particular chef's way of doing things and nothing more. If you were to visit other eating establishments, you would find not everyone serves them in that manner. Each chef has his/her own ieas.

The only reason could be tradition. Either that or they are served to hot and need to cool off... I really dont know.

I cannot give you a definite answer, seeing as how I am not someone who prepares oysters on a tray, but my guess is tradition.
