Bartenders have to be extremely outgoing and talkative as part of their job. Their goal, especially if you are alone, is to keep you at the bar as much as possible, by instigating conversation with you, listening to you, and expressing interest in you (also because they have to stand in one place for a long amount of time and the only stimulation they get is from talking to customers, especially single men/women). Bartenders know that people who are sitting at a bar alone are probably lonely or stressed out or needing someone to listen to them and they key in on that. You can try slipping him your number or something sure but none of the usual signs of interest apply to bartenders since they will display them whether they are actually interested or not.

You might want to stop going to gay bars and trying to get the attentions of a gay bartender.

be bold. girls are pretty much generally attracted to bartenders. buy her a drink. wink at her, throw *small* pieces of ice at her and then wink or smile. flirt with her more than you are flirting with any other girls in the bar.

tweeds answer was hilarious but i would sligtly touch her hand for 2 secs so no sexual harrasement comes along lol give her her favorite free and wink and say its on the house then smile and ask her a little about her self when she looks like she gonna walk off ask her for a her phone number !!
