I can dig different depths and will only keep fish in it in the warm weather. Do I still need it to be at least 3 feet deep in the middle if I am not keeping fish in it over the winter?

You should have 12" on each side of the 8 feet for overlap leaving you with 6 ft if you want it at least 3 ft wide then you you can make it 1 1/2 ft deep.
that's overlap at top 2 ft
2 sides @ 18"........ 3 ft
3 ft wide...................3
...................total 8 feet
10 foot length figure same way
18" ft deep X 2 = 3 ft
1 ft X 2 ............ = 2 ft overlap at top
5 ft left for length = 5 ft
....................total 10 ft
Approximately 168 gallons

if you make it oval you figure basically all of them the same

First of all not all pond liners come in boxes. Usually if you have a place locally the cut and sell by the sq. ft.
Generally around from $.79 to $1.00 buy the sq ft. If you want to make it larger you can buy what is called seam tape.
Goldfish if you plan to put them in there like about 18 inches or more.
I was 60 when I dug the hole myself did the wiring installed the skimmer.
If I were you and you have the money buy a piece to put on the 8 ft size and seam it together with seam tape.

It will be bigger and you can leave you fish out there if you don't have continual freezing weather in the winter.........even if you do put cattle warmer on it to keep a hole open to allow methane gas to escape and not kill the fish. Just don't feed them when water is 50 degrees or colder.
Fish stay pretty dormant.
