when isn't a good time for a chef knife... you can use a santoku knife for soft (usually white) cheese. Even better I found, use a bread knife for cutting tomatoes... but that's just because I've been out of the food service industry for 15 years and I cheated a lot.....

To be honest, after I got my first santoku I quit using my favorite chef's knives. I'll occasionally use the chef's knives when the santoku is dirty, but the santoku is always the first knife I reach for. I think it can do everything.

I have 3 chefs and a santoku. I like to use my santoku for slicing gooey stuff like cheese because the dimples in the blade release better.
