I make a few oils.

Garlic - just garlic cloves, lightly crushed, put in oil

Chilli - the same with dried chillis

Thyme or Rosemary - for these I slightly dry fresh herbs in the oven as they will otherwise go mouldy in the oil.

Vinegars are the same process, but there is no need to dry herbs, chilli, fruit etc as the vinegar is a preservative.

Halutza Olive Oil from Israel and a good red wine vinegar.

3:1 ratio of oil to vinegar.

Usually I dress the salad by pouring olive oil and red wine vinegar on first, then sprinkle with salt and pepper and herbs like basil and oregano then toss. It's fun to experiment with different oils and vinegars and herbs.

Oil and cider, balsamic or white wine vinegar, and a mix of Italian spices - you can just buy a dressing mix, or mix oregano, basil, salt, pepper, garlic salt, thyme, and parsley.

Add some minced garlic cloves for more flavor, or some mayo for a creamy dressing.

Try extra virgin olive oil and balsalmic vinegar. Use a cruet and give it a good shake!
