It's always better to eat fruits and veggies raw for nutritional purposes. But that can get old so heres some Ideas. Steamed vegies are good and insted of seasoning with salt try some low cal butter, salads are good with low cal dressing (low cal italian tastes just like reg itatian), raw celery w/ peanut butter (not a whole lot of pnbutter tho).
Try grilling your veggies too. When grilling out....wrap you corn on the cob in aluminum foil and grill it for about 30 min.
You can steam veggies that way also. Make an aluminum pouch put in your veggies and a cube or 2 of ice the ice will melt creating a steam which will cook you veggies. If you like red, yellow, bell peppers cut them in half deseed them and throw them directly on the grill until tender. Adding onion to any veggies dish will season it with out salt. Using more spices insted of salt and butter can cut down on cal.
As for fruits you can do so much. One thing I've done for my kids is take apples peel them slice them, add some sugar (or sugar substitute) and cinimmon carmelize the apples and sugar. Get a cup cake pan spray with pam or what ever use regular loaf bread cut by a round cookie cutter press down into cup cake pan add apple mixture bake on 300 to 350 until bread is golden. My kids love 'em.

Hi I have lots of great veggie ideas and a great place to look for some ideas is Dr Gillian McKeith Website she is great for them too. Try... Zuchinni Boats, Cook a bit of Onion Garlic Tomato salt pepper finally diced green pepper in a skillet till veggies are soft. Half zuchinni length wise use a spoon and dig out the flesh in the middle fill the middle with the filling you just made. Top with grated Mozzerella and bake for 25 min at 350 and enjoy. Good Luck

This is a really delicious fruit salad recipe! It looks very impressive too!
1/2 cup orange juice
1/4 cup lemon juice
1/4 cup packed brown sugar
1/2 teaspoon orange zest
1/2 teaspoon grated lemons, rind of
1 cinnamon stick
2 cups pineapple chunks
1 cup red seedless grapes
2 medium bananas, sliced
2 medium oranges, peeled and sectioned
1 medium grapefruit, peeled and sectioned
1 pint strawberries, sliced
2 kiwi fruits, peeled and sliced
In a medium saucepan, combine the first six ingredients; bring to a boil.
Reduce heat; simmer, uncovered, for 5 minutes.
Remove from the heat; cool completely.
Layer fruit in a glass serving bowl.
Remove cinnamon stick from the sauce; pour sauce over fruit.
Cover and chill for several hours.
and this is a really yummy roasted veggie dish!
2-3 medium russet potatoes, peeled and cubed
2 medium carrots, peeled and sliced
1 1/2 tablespoons olive oil
1 tablespoon dried basil
1 tablespoon dried oregano
1/4 tablespoon salt
1/2 tablespoon pepper
1 tablespoon paprika
1 large zucchini, peeled and cut up into small pieces
2 cloves garlic, minced
1 cup mozzarella cheese (shredded)
fresh parsley (optional)
Put potatoes and carrots in greased baking dish (13x9).
Drizzle with olive oil;add basil,oregano,salt, pepper,paprika and toss till coated.
Bake at 425 F degrees for about 20 minutes.
Add zucchini and garlic;stir up and return to oven for another 20 minutes or until veggies are tender.
Add the cheese and return to oven till melted and garnish with parsley if desired.

Vegey Mornay
Chop all these veges large bite-size -
peeled potatoes
pumpkin
sweet potatoe (kumara)
carrots
beans
peas
Put all into saucepan, bring to boil and simmer 15 mins. Drain, and cover with cheese sauce, and stir. You can have as meal on it's own or as side dish. For cheese sauce, just use Pkt mix. I use Continental cheese sauce ( mix with water)

grilled fruit and vegies-yum! brush vegies with olive oil and salt and pepper. Fruit can take a brushing of melted butter and brown sugar with a squeeze of lime before grilling.
