They are designed for people that stand all day. They provide maximum lower back support, and are oil and slip resistant. It's really more of a necessity than a tradition.

For comfort. They also have a slip resistance sole and therefore is better to wear in the kitchen. In the kitchen there can be alot of spills and you could accidentally fall.

They're comfortable, and are non-skid. I've been in a grease spill before wearing trainers. Not fun! I wish I would have had a pair of clogs back then.

chefs/cooks would spill hot food or grease and landed on thier feet and get burned bad because they couldnt get thiere shoes off fast enough.. now they wear shows with no heal, so the shoes come off real fast in case of a spill

i don't know how far back "Tradition" dictates, but they are good shoes for wearing in the kitchen because they are closed all around (as in no exposed heel or toe) they are a sturdy material (in case of hot oil, etc...) and they are no slip. plus they are comfy if you are going to be standing and moving around all day/night.
