Maybe some chicken tenders, mac and cheese or sandwiches. Dessert...brownies or cookies..Easy ones so there isn't much mess.

Without knowing more about this guy, it is hard to guess at his tastes. However, the best food for a picnic is "finger food", stuff you can eat with one hand while sitting or kneeling in the ground. You can batter fry almost anything - chicken pieces, vegetable sticks, onion rings, bits of any kind of meat. You can make french fried potatoes. A lot of foods sold as "junk" or "fast food" can also be made more healthfully at home and easily eaten in picnic settings - variations on hot dogs and hamburgers using higher quality or vegetarian ingredients, etc. Good Luck.

I raised 3 children of my own, and had a day care center for years. Unless there is a medical reason for what the child is to eat. Picky eater usually means, too many choices, not enough time outside playing so as to get good and hungry. When we went out. I fixed what i had. If they were hungry they ate it. If not they went without. Mine learned pretty early mom was not a "picky" type of mom. They are all healthy and happy adults.

Homemade fried chicken is good served cold, but who has time? I like to bake chicken fingers, allow them to cool, then serve with individual ranch dip cups. I buy a veggie tray in the deli, fruit like cutie oranges or the individual apple and caramel sauce packets. You can take a flour tortilla, smear it with marinara, sprinkle with shredded cheese and add pizza toppings like olives, peppers or pepperoni. Roll it up and pack. I have a picky 6 year old and a picky 3 year old and it works great!

Being somewhat picky myself I understand it is hard to feed someone like that. I personally don't like the plain food (like chicken and PBJ) so my advice may not be the best.
I love meats and cheeses rolled up in tortillas that have a smear of cream cheese on them. I also love to add lettuce, paper thin onions, peppers, cucumbers and olives on them too. Sometimes a little bacon and avacado too.
Fruit and yogurt, chips, cookies, hard boiled eggs, and nuts or trail mix also find their way into my basket on occasion.

You didn't mention some of the things he dislikes so I'll try to offer up something basic, like deviled eggs made w/ mayo sweet pickle relish and paprika. The hub and I, are complete opposites when it comes to taste. He likes sweet and I like tart or sour, so I make his sandwiches w/ Kraft spread or sweet pickles to dress them up for him. Sorry I'm so limited on the picnic ideas. It's been awhile.

Crackers and cheese. Cut up veggies, carrots, celery, radishes, zucchini. How about meat slices rolled up with cheese. Dill pickles, olives, chips and salsa. Mmmm, now I'm hungry!
