Besides the double boilers already mentioned, a pressure cooker does the same thing. However the pressure cooker is using water at higher pressure so the temperature maintained is a higher one. Double boilers use water at atmospheric pressure so they stay constantly at a lower temperature.

Of course ones all the water is gone any of these will stop working.
