Why don't you look into Green Weddings? They're really popular in the UK right now, and the main theme is to foster a better eco-system. Lots of recycling, organic foods, guest favours in form of a charity donation, etc.
There's plenty to be found online. Buy fabric from a fair trade company and make your wedding outfits yourself.

so have a beautiful wedding, I wanted to do my wedding outside, but finally went with a church, keep things simple, you'll have enough to worry about when the day comes. If you keep it simple, there's so much less to do, and you won't feel like its going by so fast, you don't have time to think, or do anything. Enjoy yourselves! Congratulations
