The formula is:
Sales price * (tax rate in %) / 100) = Tax amount
So what you bought costs $210.13 and sales tax is 7.25%, then it is 210.13 * 0.0725 = $15.23
But if you mean "total sales" as "total amount you paid including the tax", then you will have to use this formula.
Sales price * (1 + ( / 100)) = Total Sales.
Use that to find the "Sales price" then use what I've mentioned earlier to find the actual tax amount.

The tax will be the same no matter how many sales.
Say your tax is 10% total sales $100 then your tax is $10.
If you have two sales that total $100 then your tax is still $10
