I only recall two episodes involving Christmas specifically:
Season 6, Episode 13, "A Christmas Without Ranma"
Plot: Ranma and Akane are Christmas shopping when Ranma suddenly leaves. When he doesn't return home shortly, a worried Akane goes searching for him.
OAV #2, "Tendo Family Christmas Scramble"
Plot: Kasumi holds a Christmas party at the dojo. All of Ranma's (and Akane's) various suitors struggle to get along for one evening.
There are a couple of other episodes in the winter with snow and such, but as I recall Christmas is not mentioned in them.
In the USA Christmas is a time for families to be together. In Japan, it is more of a romantic holiday -- it's more for couples. That's why Akane is upset when Ranma goes missing (and the girls fight over who gets to spend Christmas with him).

There are several episodes of Ranma 1/2 that take place at Christmas, as the series ran over the course of several years in Japan. Many are just stories copied from the manga with Christmasy themes put in, but there are a few episodes that stand out as being put in only a Christmas theme.
One was put in either season 6 or season 7 of the TV series, and features the female main characters fighting over who Ranma will spend Christmas with (while Ranma is out buying presents).
The other is an OVA episode, which features a huge Christmas party being thrown at the Tendo household, with a sideplot about Ranma buying Akane a Christmas present.
