Cook your "signature" dish so she can experience what you feed your family. She eats Mexican food all the time. Help her to understand a little about you!

Also, contact your brother (her hubby? or is this your husband's sister???) and ask him what her favorite foods are. You might want to make a side dish that she will definitely like if she doesn't like whatever you cook.

Something not Mexican. When I travel to a foreign country I like to eat what people there eat. Cook whatever local/regional dish you are really good at. The only American foods I have ever heard of Mexicans not liking are grits and American style shrimp cocktail.

Don't try to do Mexican... but go with foods she'll probably be used to in Mexican cooking, just prepared differently.

How about marinated and grilled shrimp served over a dinner salad that includes a variety of fresh lettuces, plum tomatoes, diced or sliced avocadoes with a squeeze of lime over them (wait until the last minute to do the avocadoes so they won't turn brown!) serve with warm soft flour tortillas or corn muffins.

If shrimp is outside of your budget, grilled chicken will do nicely too...

For dessert, simple sponge or angel food cake with fresh fruit/fruit salad is perfect. Dark chocolate and coffee are a must...

What part of Mexico is she from?
From the coast u say, Maybe some sea food? Un caldo de 7 Mares( a mix of delicious sea food!) hmm yummy.

From Southern Mexico, Hmm Mole for sure.
(pronounced Mo-le (kind of)) A mix of exquisite spices and chilis to make a delicous Chile sauce w/a full body and texture. (Chili does not imply it has meat or beans in it).

If all else fails or seem to complicated, Try pozole/menudo simple to make and universal im Mexico. Failing that try tamales.

Now these i would recommend if you want to try to show off your expertise in Mexican cooking. Shell compliment you on your cuisine.

If you want to give he a taste of your country, Maybe U.S. or somewhere else. Try to cook some typical dish from your homeland. (please no hot dogs if this a formal dinner)

Try anything except Mexican food. She has probably had better from real Mexicans.

cook something you cook very good it doesnt have to be mexican food or anything special in particular just something you know that will turn out great!!

Depends on whether or not you like her. If you like her, make Mexican food. It's easy to make so you can't screw it up. Tacos and Burritos, Empinadas - something simple. It's tasty, filling, etc., and she'll be happy and think you are sensible and stable. If you dislike her, Indian or Pakistani food with the spice dosage they use back in India and Pakistan. She'll have diarrhea for weeks.

something she's going to enjoy, don't assume just cause she's mexican she's going to only eat mexican food. do a dish you really really like and it's bound to be a hit
