My professor has been lecturing on formyl-Methionine... I understand that prokaryotes use f-MET as the beginning of their protein synthesis, but I guess I need to know why? Why do they need to distinguish from a beginning MET codon from a MET codon downstream?

It's just the codon that is recognized by the translational machinary. It's just what nature chose to be the first codon. Many times, the methionine is even cut off of the protein. Also, AUG is the only codon more Methionine
