If your a purist, any of the handmade games from the teens or twenties. If you're a traditionalist then a Darrow oilcloth game would be a great game to find. Only one is known to exist and is in the Forbes gallery. Another is rumored to have surfaced but no confirmation on that yet. Darrow White and Black boxes are also very sought after games. There is a White box on eBay right now if you're interested. The bid is at $3000 with the reserve not met. A black box could probably be found for around $1500.
If you're looking at Parker Brothers' editions then either a #7 or a #9 "Trade-Mark" set. The black box #7 would sell in the $300-$400 range while a white box #9 would go for $500+.
The "Last Salem" edition is also a very sought after game and may be the rarest of the rare. These were produced after Hasbro bought PB and closed the Salem Mass. plant. Only 650 of these were made and given only to employees working at the plant when it closed in 92.
There are other rare PB editions such as 1935/36 Fine editions and 1936 De-Luxe editions that can go from the hundreds to the thousands of dollars and other obscure editions made through the years, but I think the most sought after editions would be those mentioned above. Good luck on the quest for the next Darrow oilcloth set to be discovered!

Not sure if it's the most sought after, but the original Star Wars monopoly game is worth quite a bit to collectors...
