In addition to evaporation, as the nutrients are used to form the future chick's body, some of them are converted into the body, and some converted into energy and escape through heat loss.
It's rather like burning a log in a fireplace. The ashes don't weigh nearly as much as the original log.

yes it does, there are many many things that do contribute to but the primary reason is Evaporation, and also burning calories which results in energy and heat and the converion of celluar materials into new products, (bones skin, feather and the like)

Probably because eggshells are porous and thus liquid can evaporate from them. Also, the chicken will use energy in growing.
