I have recently joined an NGO as a Community Service Volunteer. I am also on the verge of joining a company as their Summer Intern. Can anybody please tell me what kind of documents should I take from the above-mentioned, which is going to prove that I worked for them and also hold me in good stead when I appear for job interviews. Is an Appointment Letter, a Termination Letter and a Recommendation Letter enough for both the cases? Thanks in advance for your answer...

Ask to give experience certificate. IT will suffice.

Personally, I will say : A Recommendation/Reference Letter is good enough ...
other two letters wont' tell your future boss about your ability, characteristic etc.
but recommendation letter does! If that job is big part of your work experience, and your ex-boss is willing to provide you a good reference letter, it should be enough for an interviewer. Since this letter is just a part of interview, not everything...
But I'm not professional in this area, you may want to consider other's opinions....good luck!

Ask them to issue a certificate indicating your association with them for the period you worked &type of association or work you carriedout for them.
