First of all it is not the clock that is going off, it is the alarm. The alarm is not coming on as the alarm has already been set but is just activating. To "Go Off" means to be discharged or activated; as in "the explosive devices went off", "the siren went off" or "the alarm went off". All in how you look at it. But a good question.

Coz it's "goin' off" like a great gig, except it usually means i gotta brag my butt outta bed which aint as good.

Actually the off bit is the alarm has been on coz it's counting down, and this is the signal that it needs to be turned off.
