Call it Vegetarian chilli, or Chilli con Vegetables. As already stated Carne means meat, so admit the meat and admit the word carne. It is NOT correct to call it Vegetarian Chilli con Carne! There is no such animal... Pardon the pun !!!

I make a veggie non carne (no meat!) I basically get any veg and chop small, a can of kidney beans and can of tomatoes I mix all together and boil for about half an hour with as much chilli powder as you want. Alternatively, make as you would a usual chilli con carne but use quorn mince, I had last night with a jacket potato it was lovely and very healthy.

Chili con carne is Spanish for Chili with meat. So there is no such thing as a vegetarian chili con carne.

Do you want to use a meat substitute? If so, you could use minced quorn or any other meat substitute. If not, just add more vegetables (perhaps carrots, peppers, courgettes, potatoes?, mushrooms and more tomatoes - you could also add lentils and/or chick peas). I make chili pretty simple - fry off the 'meat' with onions, and, if you like, peppers. Add a tin of chopped tomatoes and your chili, along with some tomato puree and a little water. Add chili beans, if you want them, along with other seasoning. Bubble away for about 30 minutes. Serve with rice and nachos with sour creme - delicious!

"Con" means "with" and "carne" means "MEAT".
So there is absolutely NO WAY to make Chili con Carne w/o meat unless you use a meat substitute or completely omit it from your recipe.

Just make it like a regular chili but try lentils, mushrooms, extra types of beans.
Anything that will give protein and help give some bulk to the consistency.
