I have forgotten the name for one of my favourites meal I had during my visit in Valais in Switzerland. It is made of one or two thick pieces of local bread moisted with brandy. On top of that goes cheese, sometimes gherkins, slice of tomato, an egg and some herbals. It is than baked in an oven for some time and served very hot with glass of local wine. Anyone can remember the name of it in swiss? English translation is also ok. Thanks for any help.

Kaseschnitte, the bread is dipped in Kirsch (which as you say is brandy, but of the cherry variety). Also known as croute au fromage (for which you will find more recipes listed in yahoo).

Raclette is a type of cheese or melted cheese, but could fit the bill too aas it is sometimes done with white wine, etc

Yes, I also would say it's a "Käseschnitte", which could be translated as "cheese slice" or not quite correct as "rarebit".

The more famous cheese specialities of the region are Raclette (melted cheese with potatoes) and Fondue (dipping bread pieces in liquid melted cheese).
