Go to your local beauty supply store and ask for a deep conditioner called a 'protein reconstructor' or 'keratin' conditioner. They will have a few different brands prob. They usually come in little vials or packets, not too expensive. Use about once a week for a while. After each treatment use a good moisturizing deep conditioner. Biolage has a good one called Ultra Moisturizing Deep Cond. or something close to that. (it's in a tube) Do this routine for a few weeks and you should see some results. Keep in mind that you cannot actually repair or cure the fried part of your hair but can certainly make it temporarily healthier and more manageable. Get regular trims and use good quality conditioning shampoos and conditioners (salon quality).

Virgin Coconut Oil. Its the best thing that will help repair your hair. It is wonderful to use as a hair conditioner. It softens the hair and conditions the scalp. Using the coconut oil as a pre-wash conditioner can rid a person of dandruff or fried hair better than a medicated shampoo.

Sephora definitely has great products, however I recommend PHYTO being that it is not chemically based and your hair can really do with out it. It is a bit pricey but a little goes a long way.
You should also use Joico K-Pak reconstruct or Lotus protein. Use after shampooing leave it on for 5 minutes and condition after as usual.
Try some hot oil treatments as well. 1 thing that really softens it is to get some aloe vera open up the leaf and get the gooey stuff out in the middle. Smash it up really good and add it to your shampoo.

For shampoos, either try Aubrey Organics Line of Shampoos, New Era Moisturizing Shampoo (Love this one!), Aveda Sap Moss, or Nexxus. For a regular conditiner, either try Vo5 Strawberries and Cream, V05 Blueberries and Cream, Suave Coconut, or Suave Milk and Honey. Basically any rich conditioner will do fine. Finally, for a deep condtioner, (you should use if your hair is damaged) if your white or hispanic, try pantene restoratives or suave deep conditioner. If your black, try cholesterol. If your hair is really fried, you should really just cut that area, because burnt won't hair grow.

I went from black to bleach blond back to dark brown. So what I did first was use Redken extreme conditioner, I washed my hair with shampoo as normal and then put the conditioner on my hair and left it on for 20-30 minutes, I just clipped it up and went on getting ready or whatever. I also use Biolage, color therapy, shampoo and conditioner, it is made from natural ingredients and my hair has never felt better. You can get these things at any salon. Good luck and I hope that this helps you.

Without seeing your "fried" hair it's hard to say what may help. Why is it "fried"? Chemical damage? Thermal/heat styling? Literally caught on fire? The best person to give you advice on this is your salon professional... they can see and feel your hair and tell you the best course of treatment.

As a licensed pro, I would highly recommend Joico products available in professional salons. They contain keratin, which is part of your hair, and have proven the most effective products in my salon for revitalizing severely damaged tresses.

See a pro... with all the products out there, you're likely to make a wiser investment if you ask someone who knows and can assess the damage in person.

My absolute favourite is Tresemme for breakage with b12. It's fantastic. Bed head wild oats and honey also worked pretty good for me. Make sure you deep condition at least twice a week. For better results, clean hair, put conditioner on it, and then put a plastic bag over your head. You can also go to a salon and get a deep conditioning treatment.

Redekken Color Shampoo in a red bottle, the best moisturizing and damage-proofing shampoo I've ever used.

Oscar Blandi has this stuff that I just bought, it's fantastic.

You get get it on Sephora, here's the link:

http://www.sephora.com/browse/product.jhtml?id=P58000&categoryId=RP&navAction=jump

the conditioner will be linked on the bottom of that page.

Ojon is another brand on there I also use.

These are more expensive brands, but you get what you pay for.
