They don't. Some religions believe that other religions are valid. But everyone inevitably finds that their own religion is the best for at least them.
Some religions do have the mistaken idea that theirs is the only right one. It's because people cannot easily see through the eyes of someone else.

For one how else do you stop people from leaving your religion unless there is something threatening them to stay.
I decided, at the age of 10, that I didn't believe in God because of the hypocrisy of many Christian beliefs, based on the following themes that run through much Christian doctrines;
1. If you don't believe in the Christian God or Allah then your soul is doomed to hell if you're sinful or limbo.
2. Everything in your life, from your place of birth to your family to any affliction you might have is "Gods will."
Question: If you happen to be a child born into Hindu family for example and you die at a young age how can you be sent to hell when God is the one who put you into a situation where you're taught a different belief system in the first place? After all there are million of Muslims in the World, they don't deserve to go to Hell simply because of a coincidence of birth.
I decided, at the age of ten, that I didn't want anything to do with a religion that damned souls for things they have no control over, especially when said souls belong to innocents. It is a step of logic that many adults seem oblivious to.

Not every religion thinks their way is the only way. In fact, most religions don't think that. It is really only fundamentalists within a given religion, and in particular within Judaism, Christianity and Islam, that think that their way is the only True way.
But all religions are a quest for Truth, and a search for something larger than oneself (whether it goes by the name of God or Brahma or whatever). A person's religion is THEIR understanding of Truth. So in that sense, anyone who has a religion is convinced that it is "right" or else it wouldn't be their religion, would it? But its only arrogance that leads people to think that their understanding of truth is the only possible understanding.

What's the point in joining a religion unless you believe it's THE way to salvation? If you didn't believe yours was the right one, you'd keep shopping around. Religions are so different in such a wide variety of ways that the differences can't be rectified except by saying that everyone else is wrong.

Religion (like mythology) is the way that people pass down their culture and phillosophy. in order for the culture to stay "pure" (which is instinctively important for survival reasons) the phillosophy must supress and destroy other ways of thinking.
One of the easiest ways to do this is to make a point for the followers to believe that their religion is the only correct one. If they do not accept this as true, they will "try out" other religions and the phillosophy. That culture will then have to encorporate new thoughts and ideas until it breaks down.

I suppose people choose the religion they are part of because they think its the right one
since they are all made up of imperfect humans, none can be perfect but I suppose the one that sticks to the Word of God the Bible the closest with no added rituals/fesivals/traditions of men would be the closest to pure worship

Because, the vehicle that God gives us to go on (i.e. the religion we all choose, and the salvation we have) is something we want to share with our friends... and with our family.
There are sooooo many religions out there,... but the one true way to Heaven is to simply confess your sins to God, and really truly have faith and believe in Him.
And if you truly find Him, His precious Holy Spirit will guide you in the way to a church for you. I know you said you didn't want an example from the Bible BUT... In John 14:6, it says, "Jesus saith unto him, I am the way, the truth, and the life: no man cometh unto the Father, but by me." With that very verse, I'm sure you can, by process of elimination, decide against a few churches.

Because that's what they're taught. No religion is going to say, "hey, this other religion is better than ours." They teach that only theirs is the right one.

Not all of them do believe that. For example Hinduism, Buddhism, Sikhism, all have a "many paths to the top of the mountain" concept.

because beliefs are flimsy, fragile, insubstantial, and utterly ridiculous, but once we have one, we don't want to go through the trouble of forming a new one
