Salt will lead to temporary water weight gain. There are lots of things that can cause temporary gains when on a diet. It is the trend that is important. If you are up for a day or two, then drop back down, I wouldn't worry. But if you are slowly edging upwards over a longer period of time, you may be eating too much, or not exercising enough.

Depends on what the diet is. Is it high in salt? That'll make you retain water. Is it a beer diet? That's full of calories. Are you starving yourself? That'll make your body slow down so that you can't lose weight. Has it been a week yet? Don't expect weight loss overnight.
