Usually a week or two if the jar is covered. If you open it and it smells bad or if there is white mold on the top toss it out. It is obvious when it has turned bad.
I think that "5 days" was written by the company's lawyer or their chief salesman. Don't take it as literal truth.

Safe yes. However that 5 day shelf life is for an opened jar but one with a cover on it!!! Once mold starts growing on it then it is time to throw it out.
The 5 days only means within the 5 days the quality is as good as the day you opened it -- it does not mean anything is wrong with it other than the quality is not as good.
The jar if covered can last several days beyond those 7 days. The acid or pH of tomato sauce will prevent most pathogens from growing along with the refrigeration temperature.

I say Toss the jar it's better to blow 5 bucks on a jar of sauce than to spend a bigillion dollars at the doctors.

If you cover the paste with a layer of oil, it will last for up to 2 weeks. I'm not sure how long it will last without the oil, but as long as there is no mould, it should be fine to use.

Yes, it will actually keep upwards of 2 weeks if the lid is on, and the temperature is below 40 degrees.
