Here ya go..I guess this is the authentic recipe. Am gonna try it myself this weekend. Colonel Sanders' (Kfc's) Macaroni Salad Yield: 1 Ingredients: 1 7 ounces Box elbo macaroni cooked 2 Ribs celery minced fine 20 ml Dry minced onion (abt a tablespoon) 1/3 cup Diced sweet pickles (don't use relish) 1 1/2 cup Miracle whip 1/2 cup mayonnaise (Hellmans/Best Foods brands) 1/4 tsp Black pepper 1/4 tsp Dry mustard 1 tsp Sugar 1 salt to taste Method: Combine everything just as listed. Refrigerate salad in a tightly covered serving bowl, several hours before serving. Happy eating!

Everything in moderation!!!! I've seen some great recipes for rice salads that have very little fat. Have you considered making a salad out of sweet potatoes? They are better for you and might require some tweeking of the recipe, but are definitely a nice alternative.

Citrus Seafood Salad
1/2 lbs or so med size fresh unpeeled shrimp
4 cups water
1/4 lbs fresh lump crabmeat, drained
1/3 cup chopped celery
2 tbs chopped green pepper
1 tbs chopped onion
2 tbs reduced-calorie mayo
2 tbs frozen OJ concentrate, undiluted
1tbs + 1tps lime juice
2 tps chopped fresh parsley
1/4 tps grated lime rind
4 green leaf lettuce leaves
Peel and devein shrimp. Bring water to a boil; add shrimp, and cook 3 to 5 minutes- drain well rinse w/ cold water.
Combine shrimp, crabmeat, and next 3 ingredients in med bowl. Combine mayo and next 4 ingredients in another bowl stirring well, add mayo mixture to shrimp mixture, and toss well. Cover and chill thoroughly. To serve, spoon shrimp mixture evenly onto two lettuce-lined salad plates.
Makes two servings.
aprox 201 calories per serving, only .9g saturated fat
Exchanges: 3 lean meat, 2 vegetable
Try chicken-vegetable slaws, there is a Bulgur Salad(cracked wheat), bean salads, squash, snow peas, good ol' cucumbers and italian dressing....I would go more citrus and fish mixtures if you could.
Not a very hard recipe.

Maybe a Cucumber and Tomato salad? They are pretty good. Here's a recipe.
Ingredients:
1 tomato, chopped
1 cucumber, seeded and chopped
1/4 cup thinly sliced red onion
1/4 cup canned kidney beans, drained
1/4 cup diced firm tofu
2 tablespoons chopped fresh basil
1/4 cup balsamic vinaigrette salad dressing
salt and pepper to taste
Directions:
In a large bowl, combine the tomato, cucumber, red onion, kidney beans, tofu, and basil. Just before serving, toss with balsamic vinaigrette salad dressing, and season with salt and pepper.
Or this one -
Ingredients:
2 tomatoes, chopped
1 cucumber, peeled and diced
1 onion, chopped
1 tablespoon lemon juice
salt to taste
ground black pepper to taste
Directions:
Combine tomatoes, cucumbers, and onions in a salad bowl. Season to taste with salt and black pepper. Sprinkle with lemon juice. Chill.

If you're looking for side dishes, try a mixed bean salad, or tabouli, or maybe a chickpea salad....
Regular lettuce & veggie salads are good too, or maybe a dish of fresh sliced tomatoes with slices of fresh mozarella with some basil and a drizzle of olive oil.

try the tabouli salad and its good with a bit of tomato in it..
heres a green bean salad thats really good with bar b que chicken...
1 bag frozen green beans
4 tbl. balsamic vinegar
1/2 chopped onion
generous shake of sesame seeds
tsp. butter
melt butter in pan.. on med heat.. add green beans and onion.. when almost done and tender crisp add balsamic vinegar to coat.. cook until beans are of your liking.. sprinkle with sesame seeds and stir to coat.. let rest..
serve room temprature

tabouli is flavorful:
2 C. cooked wheat bulgar
1/2 C chopped fresh parsley
1/4 C. lemon juice (or 1 fresh lemon)
1t. of salt
1/4C. oil
3 chopped tomatoes (or a can of diced tomatoes is fine)
mix, let set/cool for 30 min. eat.
It is a little zesty, you can also add garlic if you like.

I mix up sliced,
Armenian cucumbers
Avocado
Vine ripe tomatoes
Purple onion
Small cooked beets
in olive oil and some champagne vinegar. So good, and not a thing in it, that's bad for you.
