This is my department! I perfer to fry them in butter because it is soooooo delicious. Try it and I hope you love it as much as my family does. Only needs butter but you could add a touch of salt too. OH, I want some now.

There is a recipe for something called "Pasco Potatoes", somewhere on the net. I seem to have misplaced mine, but it's kinda like this.
You take a Pyrex dish, cut them puppies up into slices about 1/8th inch thick, and then you just cover 'em up with butter and whatever else you like. I use mozzarella and a little garlic. When you cook 'em right, they have chewy skins and fluffy insides. Almost better than fried!
I know you can't cook them on a very high heat ot the butter will give you major problems. (Forgot to mention, this is done in the oven. And it takes almost an hour.) But the results are out of this world! (And you can almost hear your arteries slam shut from the fat!)
FORGOT! You don't put the topping on until the last, say, around 1/3 of the cooking time. And you lay the 'taters out in just a single layer.

You can use either but watch the heat or they will burn.
I would suggest you boil the potatoes until they are just about cooked then drain.
When cooled cut and fry gently in butter or margarine until golden and crunchy edges.
I often used left over potatoes that way, for breakfast with an egg and beans.

This is so delicious and I actually just put some in the oven but cut up some taters, I just used red ones but Ive never tried that before usually just regular Idahos are really good and put some olive oil over them and some parsley and maybe some Mr's Dash or salt and peper but you must put the parsley and bake them probably about 45 mins on 350 - i actually never time them but you cant screw them up and they are soooo good!!

No. These two fats have too low a smoke point to fry with and could catch fire or burn very easily. If you melt vegetable shortening, you might be able to fry your potatoes--it would take a LOT of shortening, though!

Yes, but don't deep fry them...that's too much butter! Put about 2 tblsp butter in a pan on medium heat and let it melt...then add your sliced potatoes...and saute' them. you'll also want to add a little bit of water to help keep them from sticking and cover the skillet with a lid on cook on medium/low until they get tender! I just made these last night!

You can fry them with real butter, but oleo margarine
does not work well at all. I use butter to fry lots of things and we all know butter tastes great on out taters.

I like to bake my potatoes 'til slightly under done then fry them in butter with diced onions. Why cook them a little first? 'Cause you will use less butter and it is less likely to burn.

You can use butter, but margerine does not work well, it has too much water. Watch your heat, butter has a lower burning point than oil, but a much better flavor.
