Sensory table is a great idea. Target is great about having lots of educational type toys as well. How about pretend play items (hats, cowboy boots, uniforms etc) Or you could make a special gift certificate (Good for a day at the zoo, Redeem for a trip to the children's museum.)

Leapster makes GREAT educational toys for this age - check their website for suggestions that are age appropriate.
Leap Pad and Laep Frog Toys -----
The little touch leap pad is great! or the little leaps program for the television. Add a few books or tapes and they'll be set for hours of fun!
Other ideas:
V- smile system- educational and musical
Laugh n Learn piano by Fisher Price- about $50
Any Fisher Price Little People toys!!
outdoor sand & water table or climber/ slide

If youre going to spend that much, get the new Little Tykes Wave Climber, or some kind of water or sand table.
Oops I meant this water slide thing (for boats not kids)
