Does it matter how large a remote wire running from a CD head unit to an amp is?

The remote terminal doesn't draw a lot of current, is used to turn on/off the amp. Using a small wire won't affect your system.

NEC article 640 "Audio Signal . . . Equipment" says Class 1, 2, or 3 wiring (article 725)

725 generally allows #18 (minimum) if it is part of a "listed" (for example, by UL) cable.
