Avocado Lobster Rolls
1 lb Avocado, diced
2 Cups Coarsely chopped cooked lobster meat*
3 Tbsp Finely chopped sun-dried tomato (packed in olive oil)
3 Tbsp Finely chopped shallot
1 ½ Tbsp Finely chopped garlic
2 Tbsp Fresh lime juice
½ tsp Salt
¼ tsp Freshly ground black pepper
1 Egg, beaten
12 Egg roll wrappers
Olive oil - as needed
Dipping sauce - Recipe follows
Lime slices - for garnish, optional
Cilantro sprigs - for garnish, optional
*Coarsely chopped, poached sea scallops can be substituted for lobster meat.
Gently fold together avocado and next 7 ingredients; reserve.
Brush edges of 1 egg roll wrapper with egg. Put a scant 1/3 cup filling 1 inch down the edge of the wrapper. Fold in sides; brush sides with egg. Roll. Seal tightly. Refrigerate on a parchment-lined sheet pan dusted with cornstarch, covered, for at least 45 minutes. Rolls can be made up to 8 hours ahead of service.
Shallow fry 1 roll in hot olive oil, turning frequently, until golden brown, about 3 minutes. Serve with 3 tablespoons dipping sauce; garnish with lime slices and cilantro sprigs.
Dipping Sauce
In a blender, combine 4 ounces peeled, seeded, and coarsely chopped Roma tomatoes, 3/4 cup chopped cilantro, 2/3 cup rice vinegar, 2/3 cup soy sauce, 2/3 cup fresh lime juice, 2 tablespoons finely chopped garlic and 1-1/2 tablespoons finely chopped fresh ginger; puree. With machine running, drizzle in 1/2 cup olive oil. Reserve. Yield: 3 Cups.

Here's a change from french fries as a side to a burger:

Beer-Battered Fried Avocado Wedges with Salsa
1 cup lager beer or ale
1 cup all-purpose flour
1-1/2 tsp paprika
2 cloves garlic, chopped finely
2 avocados
Vegetable oil as needed for deep frying
Salt as needed
1 cup purchased salsa
To make beer batter, whisk together beer, flour, paprika, and garlic until well blended. Let stand at least 2 hours. Peel avocados; cut each into 6 wedges.
Dredge 6 wedges in reserved beer batter. Deep fry in hot oil until golden about 3 minutes. Repeat with remaining wedges. Serve wedges with salsa.

Caribean Salad
Ingredients
1 lb. bacalao (salted cod fish fillets)
1 medium onion (minced)
2 medium potatoes
2 aguacates (avocados)
2 chayotes (don't need this really I don't even know where to buy them! lol)
1 diced tomato
4 hard boiled eggs (sliced)
A sprinkle of "peppa" (pepper)
Salad dressing* (see below for this)
Directions
Start by boling the cod fish and change the water at least 2 times.
Change the water, add the eggs, cubed chayotes, cubed potatoes and boil for 10-15 minutes. DO NOT OVER COOK, IT WILL GET LIKE RUBBER!!
Take out the potaoes and chayotes and run cold water over them to stop them from cooking.
Shred the cod and make sure it doesn't have any bones and set aside.
Meanwhile, peel and slice the eggs while you cube the avocados and put them in a big bowl.
Add the potatoes, chayote and the shredded bacalao, to the eggs and avocado.
Salad Dressing = 3/4 cup olive oil and 1/4 cup vinegar. Mix well and pour on tossed salad. Sprinkle the "peppa". lol
Serve immediately and enjoy!!!
Tips
For better results, soak the bacalao over night.

Cooking Time: 10 minutes
Serves: 4
1. Cut the avacado in half, and remove the stone. Scrape out the flesh into a bowl, and mash with a fork.
2. Peel, deseed and finely chop the tomato (you can easily peel the tomato by pouring boiling water over it and leaving it in the water for a couple of minutes). Finely chop the red onion.
3. Mix all the ingredients in the bowl, and serve.
If the red onion is too sharp for you, just omit it.

"Try this chicken salad when you really want a treat! This recipe makes sandwiches - but it can be served over lettuce as an alternative."

INGREDIENTS
4 cooked, boneless chicken breast halves, shredded
1/3 cup prepared Ranch salad dressing

1 cup cashews
1 avocado - peeled, pitted and diced
salt and pepper to taste
12 slices bacon
6 slices Swiss cheese
12 slices bread, toasted
DIRECTIONS
In a large bowl, mix the cooked chicken, dressing, dill, cashews, and avocado. Season with salt and pepper. Cover, and chill in the refrigerator at least 30 minutes.
Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown; drain.
Spread even amounts of the chicken mixture on 6 slices of toasted bread. Top each with 2 slices bacon and 1 slice Swiss cheese. Top with remaining bread slices to make sandwiches.

Guacamole or Avocado Smoothie
At first when I thought of avocado smoothie I thought it was disgusting {a horrible combination}. But when I tasted it I had to change my mind.
1 avocado.
1-2 c. soymilk
1-3 Tbs. Maple Syrup or other kind of sweetener.
1t. Roma (coffee substitute)
1 banana.
You can try adding other flavors or sweeteners that suit your taste and blend everything smooth in a blender
Avocado dressing
Avocado blended with garlic and hemp oil makes an unusual and delicious salad dressing.
Yield 1½ cups
Time 5 minutes

Ingredients
2 very ripe avocados
¼ c hemp oil or olive oil
juice from 1 lemon
1-2 T cilantro, minced
pepper
1-2 t lemon juice
water
Directions
Cut avocados in half. Hold the pitted half firmly, and strike with the chef's knife. The knife should stick to the pit, making it easy for you to pull it out of the avocado. Repeat with other avocado.
Scoop avocado out of skins and place in bowl. Mash with fork, then stir in hemp oil, lemon juice, cilantro, pepper, and vinegar. Thin with water, if necessary. Taste and adjust seasonings.
Notes A thicker dressing can also serve as a tasty dip or be drizzled over steamed vegetables.
Avocado with sesame soy dressing
2 tablespoons soy sauce
1 1/2 tablespoons fresh lemon juice
1 teaspoon Asian sesame oil
1/2 teaspoon sugar
Pinch of salt
2 chilled firm-ripe California avocados
12 butter lettuce leaves, rinsed and dried
2 teaspoon sesame seeds, toasted lightly
In a medium bowl whisk together soy sauce, lemon juice, oil, sugar, and a pinch of salt until sugar is dissolved.
Halve, pit, and peel avocado and cut crosswise into 1/2-inch slices. Add avocado to dressing and gently turn to coat.
Line 4 salad plates with lettuce and divide avocado and dressing between them. Sprinkle sesame seeds over avocado.
Serves 4.
But the Avocado smoothie is my favorite!

I like to put them in salads, also like to make a dip out of them. and they way that I do this is by mixing about 4 table spoons of sour cream and 1 whole avocado with your favourite hot sauce and then bring it together in a bowl and then mix it till it is all mixed very well and that's it you got your dip sauce

I love avocados!!! I make these things at home all the time:
- Tomato/ bacon/ avocado sammie.
- Curried chicken salad with mango chutney and avocado slices: take chicken, mayo and curry powder and combine. Spread mango chutney on a pita, add chicken and top with avo's.
- Avo and tuna: mix a can of drained tuna with soy sauce and sesame oil. Put on toast points and add sliced avos.
- Avocado ice cream: 3 avos, 3 cups milk, 1 cup heavy cream, 3/4 cup honey, 1 teaspoon salt, juice of half a lemon. Blend in blender (add heavy cream last) and make according to your ice cream maker.
- Avo smothie: 1 banana, half an avo, 1 cup milk, sugar to taste. Add ice if you like.
-Quesadilla: between 2 tortillas: cheddar, green onions, sliced tomatoes, sliced avos, cilantro leaves, season with cumin. Serve with sour cream and salsa.
-Omlette: fill an omlette with ham, cheddar, avos and salsa.
-Salad: grilled salmon, cubed avo, red onion, cilantro, lemon juice, tomato. Serve over greens.
-Appetizer: Tomato paste, avo slices and goat cheese on toast. I use anchovies too sometimes but thats weird to most people... but I like it!
-Sammie: Avo, cream cheese, smoked samon.
I know, its a lot of ideas... but hey, I love me some avocados! I hope you like some of these! Feel free to edit any of these things as these are only rough guidelines and ideas.
