for communication with the pilots. you wont be able to communicate by mouth becuase of the noise of the engine and rotors spinning.

Due to the rotor's downwash and the powerplant right over your head, helicopters can be described as flying vibrating machines that produce a lot of noise and "rattling" inside the cabin.

The head phones block out most of the outside noise and allows you to talk to the rest of the crew easily.

You don't have to, unless you need to communicate with the pilot. Personally, I would prefer you didn't.
Headphones are provided for passenger comfort, as helicopters tend to be noisier than airplanes.

It gets noisy in those machines. Lots of times the door is left open and the pilot is not able to watch where he is going and talk to you at the same time with the door open.

mic so you can talk to each other

That's the only way you can hear each other without yelling.
