weekend in the summer on Sunday to hang by the pool and enjoy lunch and dinner together.
I am usually looked to to bring the dips and apps. Last year the big hit was my pesto burchetta and my hummus and guacamole. I don't want to stop using these recipes, but I don't want to wear out their welcome either. Do any of you have some favorites to pass along to me to add to my collection?
Thanks!!

This is a very very popular dip at our family get togethers. It is also very easy to put together!

Garlic Feta Cheese Dip

4 ounces crumbled feta cheese
4 ounces cream cheese
1/3 cup mayonnaise
1 clove garlic, minced
1/4 teaspoon dried basil
1/4 teaspoon dried oregano
1/8 teaspoon dill weed
1/8 teaspoon dried thyme

In a mixing bowl, combine the above ingredients with mixer until blended well.
Cover and chill until ready to serve.
Serve with vegetables or crackers.

Another one of my favorite dips is Black Bean that is delicious served with tortilla chips! Here is a great recipe-

2 cups cooked drained black beans
4 teaspoons tomato paste
3 tablespoons water
2 cloves garlic, minced
2 teaspoons lime juice
1/2 teaspoon ground cumin
1/2 teaspoon salt (to taste)
1/8 teaspoon cayenne pepper (to taste)
2 green onions, chopped
2 tablespoons mild green chilies, chopped

Process all ingredients except green onions and chilies in a blender or food processor until smooth.
Stir in green onions and chilies and place in a serving bowl.

1. Mix cream cheese w/a package of dry italian dressing mix and spread on pumpernickle bread (buy the little tea sandwich loaves) place a slice of cucumber on top and then sprinkle w/freshly chopped dill. This has been a big hit at summer picnics every time I make it!!

2. Spread cream cheese on a platter, pour pilante sauce or salsa on top, add chopped black olives, scallions and shredded cheese....serve w/veggies or tortilla chips.

Pizza Fondue is a great dip to make. You cook it in the crock pot. It is: 16oz cube cheese, 2 cups shredded mozzarella, 1 28oz jar spaghetti sauce, 1/2 cup beef broth or red wine. You put them all in the crock pot and let it simmer for an hour then dip italian bread in it.

one of the easiest and tastiest dips I ever make is a french onion dip. 1 package dried Lipton onion soup mix + 1 16oz. container of sour cream. Stir until well blended, great with ruffles chips.
You can also go with a simple salsa. My friend always adds a dollup of sour cream in the middle of her salsa, my husband goes crazy for it.
They are nothing fancy, but really tasty, cheap, and quick! Classic favs.

How fun to get together with family!!! Here are some of my favorite dips for gatherings:

1. Hot Artichoke Dip: 2 cans artichoke hearts, drained and coarsely chopped, 1 can diced green chili's, 1 tsp hot sauce, 1/8 tsp garlic powder, 1 cup whole egg mayonaise, 3 cups good shredded parmesan cheese. Mix the above together and place in baking dish. Bake at 350 degrees for approximately 45 minutes or until bubbling and golden brown. Serve with tortilla chips.

2. Cream cheese Chili Dip: 2 packages softened cream cheese, 2 cans chunky chili con carne, 1 cup shredded cheddar cheese, 1 T chopped cilantro. Spread cream cheese in the bottom of pie plate or similar dish. Top with chili and cheese. Microwave for 1 -2 minutes or until cheese has melted. Sprinkle with cilantro.

3. Cream Cheese and Shrimp Dip: 2 packages cream cheese, 1 can tomato soup, 1/2 cup diced onion, 1/2 cup diced celery, 2 cups cooked shrimp, 1 tsp hot sauce. Heat soup over medium flame and add cream cheese, onion, and diced celery. Stir until melted. Add hot sauce and shrimp. Serve hot or cold with crackers.

4. Baked Brie en Croute: 1 large wheel brie, 1 sheet puff pastry, defrosted and rolled out to make a 13 inch rectangle, 1 jar raspberry jam. Place brie in center of puff pastry and top with jam. Bring up sides to form a 'package". Tie with butchers string and trim ends to form decorative leaf shapes. Press against pastry. Brush with 1 egg mixed with water and bake at 350 degrees until puffed and golden. Serve with Black Pepper crackers.
