As far as I know, hunting the ortolan has been illegal in France since the '70s, punishable by a five-figure-sum fine, possibly more by now. Like with so many good pieces of conservation legislation, there will always be those who, for a quick and substantial buck, will risk the penalties regardless, and for the same reason, less scrupulous chefs who are prepared to cook and serve these little birds, and deluded gluttons who will pay a king's ransom to eat them. 'T was ever thus. :-(

I can't tell you about right now today, but I can report about the former president Miterand. when he was dying he knew he was and I believe he gave a party at which this dish was served. He ate 2 and then didn't have another meal before his death sometime later! It is considered a delicacy.
I went to school with his daughter and I can believe this story.
