Because they get to carry just a few grains at a time back to the nest, rather than a whole insect that is 5 times their size. I'd like sugar, too.
Also it is an excellent source of energy, which is quicker to utilise than other sources such as starch and cellulose from plants.
But I reckon they're just being lazy.

because its full of energy, lots of energy in a small space, easy to carry, less energy used to carry for more energy gained
