Natural casing? It is the difference between using the emptied pig or sheep and cow intestines vs skinless. I cant see the big deal between using it and not using it. Natural casings has always been traditional. Its hard work to fill these sausages from scratch but the commercial factories do it all so very fast and in huge volumes.
My answer is both. Yummy skinless kielbassa, Good old Safeway all beef, kosher dogs at Costco,Plump polish sausage loaded with fresh saurkraut.. the list goes on.
