I don't wanna overdo it and how often and how big should the pieces be ?

I would not recommend feeding lettuce at all. I had a client that was feeding lettuce many years ago and the fish was constantly sick and the tank would get cloudy often. After removing the lettuce from the diet and starting the fish on a proper diet the fish and water quality improved. Lettuce is mostly cellulose and also breeds many types of bacteria (it is used in cultures because of this). I recommend reading this article:

It really depends on the size and species of fish to be honest. Some really like plenty of lettuce, some will barely touch it. I suggest you slightly soften the lettuce and use a lettuce clip ( available at most pet stores and certainly any that deal with salt water) and just allow the lettuce to stay in the tank for a few hours. They fish will graze off of it and get as much or as little as they want. Do this every few days or once a week depending on the type of fish.

The maximum amount you should feed is 5% of its body weight, but that's impossible to measure anyway. Normally, a lettuce of a coin size is enough for a medium fish.

Based on the size of the fish and the size of its mouth, you have to mince it as small as possible, preferably the size of fish flakes. Once a day is perfectly ok.

Feed it a piece about 2 inches in length and 2 inches wide
